Many of us use microwave ovens on a regular basis, but how many of us actually know how they work? Microwaves are radio waves in the 2,500 megahertz range. Radio waves at this frequency are easily absorbed by water, sugar, and fat. Of course, these are the exact materials found in most foods. On the other hand, plastic and ceramics do not absorb waves at this frequency, so dishes placed in a microwave do not become hot while the food they contain goes through the cooking process. Metal dishes are generally not a good idea for microwave oven use because metal reflects microwaves, and this can create sparks which can potentially result in fire. It is also good to keep in mind that microwave ovens may not be the best choice for baking cakes and breads. Because the air inside a microwave remains at room temperature, the crusts which we are used to on such items will not form.
